| This year's Folklife Festival offered a wide range of foodways
presentations which gave visitors the opportunity to learn more about food and its role in
the living cultures of the Philippines, the Baltic Nations, Wisconsin, and the Rio
Grande/Rio Bravo Basin. All recipes on the Foodways web pages have been provided by
participants who were demonstrating cooking, as well as performing their non-culinary
talents, at the Festival. Some modifications have been made to recipe ingredients as
were necessary. In a few incidences, the descriptive text has been expanded in order
to clarify directions. We hope you will savor and enjoy these flavors from the
